Quick Swirl: Eberle Cabernet Sauvignon 2000 (NW)

Allow me to share a few tasting notes on the following:

Eberle Cabernet Sauvignon 2000:

Mushrooms, olives, and earth on the nose
Earthy and tangy on the palate
Moderate tannins and smooth finish

This wine is different. In fact, Paso Robles, CA, wines are different in general. But this one stands out with a unique flavor that is a departure from common up-front fruit. It may be an acquired taste, of sorts. I was surprised by it, but I enjoyed it with a rack of lamb. The restaurant price I paid was $40/bottle in Connecticut.

Yes, "earthy" describes Eberle Cabernet Sauvignon 2005. Paired with
sirloin sushi at Veritas, College Station, Texas, it's a winner!
